The materia prima (or raw ingredients) is a guiding principle and source of inspiration for Chef Romera's creations. The true flavors of the ingredients are essential in the search for a perfect harmony in cuisine. Romera's mission is to find truth in absolute creativity from scratch while always looking towards nature.

To compliment Chef Romera's culinary philosophy, a rooftop space has been dedicated to display the mini-vegetables, edible flowers, and aromatic herbs as
a symbol of the purity embodied in each course. The Estudio is also a place for reflection and development of new and creative innovations and ideas focused on a profound respect for nature.

Each of the eleven courses is also paired with Chef Romera's signature Aqua Gourmand, the latest
innovation in high cuisine, ingredient-driven waters
that compliment the flavors and aromatic properties
of each dish.
